Sweet potato bowl with black beans

Ingredients (for 1 serving)

  • 1 medium sweet potato
  • 100 g black beans (canned)
  • 50 g corn
  • 25 g Greek yogurt
  • 1 tsp paprika
  • 1/2 tsp cumin
  • Salt and pepper

Preparation

  1. Peel the sweet potato, cut into cubes, and bake in the oven at 200 °C (392 °F) for about 25 minutes.
  2. Rinse the beans and corn, season with paprika, cumin, salt, and pepper, and warm briefly.
  3. Arrange everything in a bowl and serve with a dollop of yogurt.

If you prefer a lower-fat version, you could use yogurt with 2% fat or reduce the amount of corn.
